The only Cabernet Sauvignon we have ever made outside of Doubleback. The 2015 Flying B Cabernet Sauvignon came to us as we secured some incredible fruit contracts in the Walla Walla Valley and our estate vineyards performed so well. Named after Drew?s great-grandfather?s cattle ranch in Central Washington, this Cabernet embodies that spirit and begs for a T-bone or ribeye steak. With the ultra-warm vintage of 2015, we brought these Cabernet lots into the winery in mid-September. All lots were hand-sorted, destemmed, crushed, and allowed to cold soak for 5 days prior to primary fermentation by native and selected yeasts. We completed all-natural secondary fermentation in 60% new French oak and aged the wines with periodic racking for 22 months. Aromatically dark fruit, sage, rosemary, thyme ? it almost brings me back to the vineyard sites themselves. Flying B is a full-bodied, sexy, lush and powerful Walla Walla Cabernet Sauvignon from Bob Healy and Seven Hills Vineyards ? both are warmer sites on the Southwest edge of the AVA. Enjoy!

Tasting Notes
Coming from a hot vintage, the aromas bring notes of blackberry jam, coffee, fruit rollup, flower and herb. The tannins are quite firm, showing a bit of astringency out of the gate but settling down with some time open. Despite the warmth of the vintage, it brings a pleasing sense of acidity.
