The grapes are harvested during the first decade of September, they are then pressed and the must obtained remains in contact with the skins for one night at a low-temperature. Racking and fermentation of the free run wine follows which is put into stainless steel tanks at a strictly controlled temperature. The wine obtained matures for about 4 months. Before bottling the spume develops inpressurized tanks to obtain a natural re-fermentation.
