The Amarone appellation dates back to the 8th/10th Century when it became necessary to label the wine produced with dried grapes, similar to Recioto but with completely different characteristics. With Recioto steps are taken to prevent the conversion of its residual sugars to alcohol resulting in a sweet wine, whereas with Amarone (Amaro meaning bitter ) fermentation continues resulting in the renowned dry, red wine, full-bodied, strong and distinguished.
